Method4 steps · about 45 min
Step 1: Mix 750 g ground pork, 250 g finely chopped bacon, ½ bunch chopped cilantro leaves, 2 tbsp sambal oelek, one minced garlic clove, zest of the lemon (1), 1 tbsp brown sugar, 1 tsp sausage salt and 1 tsp sausage pepper. Form into 6 equal patties.
Step 2: Mash the 250 g room-temperature Camembert OR Brie with 120 g cream cheese and 10 g butter. Mix in 2 tbsp chopped chives, ¼ finely chopped yellow onion and 1 tsp paprika. Add 120 ml beer last, using a little separate extra beer only if needed for spreadable consistency. Refrigerate the spread until assembly.
Step 3: Fry the patties over medium-high heat for about 8 minutes per side, 16 minutes total as a guide, until browned and the centres reach 160°F /71°C. Transfer to a paper-towel-lined plate. Fry the 6 eggs in the same skillet using the rendered patty fat, until the whites and yolks are firm; use pasteurized eggs if choosing softer yolks. Halve and toast the 6 ready pretzel buns.
Step 4: Spread the prepared Obatzda on the tops and bottoms of the toasted buns. Add one cooked sausage patty and fried egg to each, then garnish with the separate extra chopped chives. Serve immediately.
