  1. Step 1: Mix the 3 tbsp ground bean sauce, 2 tbsp hoisin sauce, 2 tbsp tomato sauce, red fermented bean-curd (1 piece) piece, 1/2 tsp black pepper, 1/2 tsp five-spice powder, 1 tsp garlic salt, 2 tbsp marinade sugar and 1 tbsp cooking wine. Crush the bean curd and mix smooth. Taste this clean marinade before adding chicken; add up to the separate 1 tsp adjustment sugar only if needed and reserve unused sugar. Mince the shallot (1 oz) and ginger (1/2 oz) and mix into the marinade.

  2. Step 2: Pat the drumsticks dry, place in a large bowl and carefully pierce the thickest part two or three times with a small knife. Coat with half the prepared marinade, then gradually add the remainder so all pieces are coated. Cover and refrigerate for at least 1–2 hours or up to overnight.

  3. Step 3: Preheat to 385°F and place a rack in the middle. Put a baking rack over a foil-lined pan and space the marinated drumsticks evenly on it. Bake for 30 minutes, then flip and drizzle with the 1 tsp cooking oil. Increase the oven to 390°F and cook about 10–15 minutes more, continuing until the centre of the thickest drumstick, away from bone, reaches the source target of 180°F/82°C. Brush with the clean 1 tbsp honey, turn back to the original side and bake about 3–5 minutes to caramelize. If replacing honey, make a small clean syrup from equal parts separate sugar and water and microwave for about 1 minute to dissolve; use a little for the glaze and reserve excess. Serve the fully cooked glazed drumsticks.
