Step 1: Have the salsa and garnishes ready. Work alongside making eight fresh homemade corn tortillas with your tortilla recipe, keeping the comal or pan hot. Crack one pasteurized egg into a ¼-cup measuring cup with an easy-pour lip and season with salt and pepper. As the first tortilla puffs, carefully cut a 1–2-inch opening in its edge with a sharp paring knife, then gently open the pocket farther with a soup spoon if needed. Keep this first seasoned egg and opened tortilla ready together.
Step 2: Pour the first seasoned egg into the tortilla pocket and put the filled tortilla back on the hot comal or pan. Cook the first face for about 2 minutes so the egg begins to set.
Step 3: Carefully flip the filled tortilla and cook the second face for about another 2 minutes, or as needed until the white is set and the pasteurized yolk has your preferred doneness. For a firm finish, cook until both white and yolk are fully set. Move the finished nest to a plate.
Step 4: Repeat for the remaining seven tortillas and eggs, opening each fresh tortilla as it puffs and filling it with one newly cracked, seasoned pasteurized egg. Cook about 2 minutes on each face, continuing as needed for set whites and your chosen yolk finish. Serve the nests promptly as they finish.
Step 5: Spoon ready chile de árbol salsa verde over each finished egg nest and garnish with crumbled queso fresco, Mexican crema and ripe avocado slices. Serve one nest per portion, eight portions in total.
