Step 1: Cook the pasta according to the package instructions, then drain.
Step 2: Meanwhile, halve two lemons for grilling. Zest and juice the remaining lemon, keeping those preparations separate; expect approximately ½ teaspoon zest and 1 tablespoon juice.
Step 3: In a large skillet, over medium heat, grill the lemon halves until browned. Approximately 2-3 minutes. Then, remove the lemons from the skillet and set them aside.
Step 4: Using the same skillet, brown the bacon (3-5 slices).
Step 5: Add about a tbsp of olive oil to the pan with the browned bacon, and add the onions.
Step 6: Let the onions saute until they are transparent, about a minute or two.
Step 7: Add the minced garlic (6 cloves), and saute until it's golden.
Step 8: Add the lemon juice to the pan and let it cook until it's nearly evaporated - about a minute.
Step 9: Add the collard greens (1-2 bunches) and season with salt and pepper (to taste). Give everything a couple of quick stirs just to wilt the greens, then turn off the heat.
Step 10: Add the lemon zest and the cooked pasta, stir to combine.
Step 11: Serve the pasta in bowls, dividing the burrata (2-3) among the portions (about half a ball per bowl when available). Add the reserved grilled lemon halves for squeezing and drizzle with extra olive oil if desired.
