Step 1: Peel and finely chop both onions (2). Heat all the olive oil (2 tbsp) in a large flameproof casserole or cast-iron skillet over low heat. Add all the onion and a light sprinkle of onion salt, cover and cook gently for fifteen minutes, stirring occasionally, until softened.
Step 2: Peel and finely chop all four garlic cloves. Add them to the actual softened onions and cook for two more minutes.
Step 3: Wash and deseed all five sweet bell peppers and cut into chunks. Stir all of them into the actual aromatic pan, cover and cook over medium heat for about five minutes, stirring occasionally, until just tender.
Step 4: Wash the thyme and pick its leaves, discarding woody stems. Wash and cut the courgettes (2) and aubergine (1) into chunks. Stir all the dried oregano (1 heaped tsp), thyme leaves and four bay leaves into the actual pepper pan with black pepper and a little extra salt only if needed. Add all the courgette and aubergine, combine, cover and cook over medium heat for ten minutes, stirring as needed.
Step 5: Wash and roughly chop all four tomatoes. Stir them into the actual vegetable pan, cover and cook for twenty minutes, stirring occasionally, until the vegetables are tender and a sauce forms.
Step 6: Remove all four bay leaves from the actual cooked pisto. Make four spaces and carefully crack one egg into each without breaking the yolks. Cook over medium heat for five to six minutes, continuing as needed until whites and yolks are set and cooked through. Wash and roughly chop the parsley (½ small pack) leaves, scatter them over the actual egg-topped pisto and serve as four portions.
