Method7 steps · about 1 hr 30 min
Step 1: Beat the egg (1), finely mince the washed parsley (1 bunch) and peeled garlic (2 cloves), and shred both cheeses (6 oz). Whisk the egg, parsley, garlic and crushed red pepper (¾ tsp) together, then mix in all the smoked Gouda and Emmentaler. Divide the filling into forty-eight equal small portions, roughly rounded teaspoons each, so every triangle receives filling.
Step 2: Melt the listed butter and keep it separate for brushing and tray grease. Working one phyllo sheet at a time and keeping unused sheets covered, brush each of the twelve sheets with about one tablespoon of the melted butter. Cut each brushed sheet lengthways into four strips, making forty-eight strips altogether. Keep any remaining melted butter for the tray and retain any surplus.
Step 3: Put one prepared filling portion at one end of each buttered phyllo strip. Fold the corner of each strip over its filling to start a triangle.
Step 4: Continue folding each filled strip along its length in triangular folds, enclosing the filling, until all forty-eight stuffed triangles are complete.
Step 5: Heat the oven to 175°C / 350°F. Lightly grease a large baking sheet with a little of the held melted butter. Keep any surplus listed butter for another use.
Step 6: Arrange the filled triangles in a single layer on the prepared baking sheet. Bake in the heated oven for thirty minutes, or until lightly browned. If using several sheets, arrange them so the pastry bakes evenly.
Step 7: Serve the baked cheese triangles warm. The source batch makes forty-eight triangles, divided into sixteen servings.
