Step 1: Preheat the oven to 350°F (175°C). Have a baking tray ready; line it with aluminum foil if desired. Peel the carrots (700–900 g) and dry them thoroughly, keeping them whole.
Step 2: Arrange the prepared carrots on the tray. Drizzle with the 2 tablespoons roasting olive oil, sprinkle with the 1/4 teaspoon fine sea salt, and turn with tongs until evenly coated.
Step 3: Roast until the carrots have begun to soften but are still chewy inside, about 20–30 minutes for large carrots. Check smaller or new carrots sooner; they can take much less time. Make the glaze while they roast.
Step 4: Mix the glaze: the separate 1 tablespoon olive oil, 3 minced garlic cloves, 2 tablespoons white miso paste, 1 tablespoon maple syrup and 1/2 teaspoon cayenne pepper, or the paprika choice for less heat.
Step 5: Take the tray out and brush glaze over both sides of the carrots. Use enough to coat them; some of the one glaze batch may remain unused. Choose the regular finishing roast if they are still chewy inside, or the small-carrot finish if already tender.
Step 6: Regular finish only: return the glazed carrots to the 350°F (175°C) oven for another 20–30 minutes, until a fork pierces them easily and the glaze is lightly caramelized. Skip the hotter small-carrot finish.
Step 7: Already-tender small-carrot finish only: instead of the regular finishing roast, raise the oven to 400°F and return the glazed carrots just until the glaze caramelizes. Watch closely to avoid overcooking the carrots or burning the miso. Skip the regular 20–30-minute finish.
Step 8: Plate the carrots from your one chosen finishing roast and serve warm as a side dish. Sprinkle with the optional 1 tablespoon chopped chives if using.
