Step 1: Rinse the apple, oranges (2) and mint (8). Core and thinly slice the apple, thinly slice the oranges, and dice enough fresh pineapple (1 cup) to measure 1 cup. Keep the 1 cup frozen grapes frozen and the cava chilled until serving.
Step 2: Put the prepared apple, oranges and pineapple into a large bowl. Toss with the 2 tbsp granulated sugar and leave to macerate for at least 10 minutes, until the fruit begins releasing juice.
Step 3: Add the ½ cup brandy, ½ cup orange liqueur and ¾ cup pineapple juice to the fruit. Add the prepared mint, both cinnamon sticks (2) and the optional star anise (1). Gently muddle the mint and fruit with the back of a wooden spoon.
Step 4: If time allows, cover and refrigerate the fruit-and-liquor mixture for at least 1 hour so the flavors mingle. Keep the cava chilled separately and leave it unopened until serving.
Step 5: For make-ahead preparation, keep the fruit, juice and liquor mixture covered in the refrigerator for up to 24 hours. Add the cava only when ready to serve, so it keeps its bubbles.
Step 6: Just before serving, add both 750 ml bottles of chilled cava and the 1 cup frozen red grapes to the fruit mixture. Stir gently to preserve the bubbles. Taste and stir in a little extra granulated sugar only if needed.
Step 7: Divide the sangria among eight glasses filled with ice, or transfer it to a serving pitcher filled halfway with ice before pouring. Include fruit as desired and enjoy immediately.
