Step 1: Coarsely pound or blend the shallots (6), garlic (3 cloves), pepper, and salt (½ tsp). Set aside.
Step 2: Mash the tofu (450 g).
Step 3: Add a little water to the wheat flour (2 tbsp) to make a smooth, thick paste.
Step 4: In a large bowl, beat the eggs (2). Add the flour and stir.
Step 5: To the egg-flour mixture, add the pounded seasoning. Add coriander (2 tbsp) and spring onions (2 tbsp) if using, and mix well.
Step 6: Add the mashed tofu. Mix well.
Step 7: Take a spoonful of the mix and place it on your palm. Roll into a ball, and use the spoon to help make it compact and evenly-shaped. Do this until the bowl is empty.
Step 8: Heat a generous quantity of oil in a wok or pan for deep frying. Once hot, add the fritters and fry for 2–3 minutes each side, 4–6 minutes total, until golden-brown and cooked through.
Step 9: Serve with a serving of sambal kecap.
