Step 1: Soak the tofu pieces in salt water for 10 minutes. Drain, and dry the excess moisture with a paper towel.
Step 2: Heat the 3 tbsp vegetable oil in a wok or frying pan over medium-high heat. If desired, lightly fry the thoroughly drained and dried tofu until pale golden, around 5 minutes, then remove and reserve the tofu while keeping the remaining pan oil. If skipping this optional fry, reserve the drained soaked tofu and use the same heated oil for the main stir-fry.
Step 3: Lower the heat to medium. Sauté the shallots (3) in the retained pan oil until softened, about 3 minutes.
Step 4: Add the garlic (2 cloves) and red chillies (2). Saute for another 2 minutes.
Step 5: Add the spring onions (2 tsp). Saute for 1 minute.
Step 6: Add the beansprouts (200 g) and the ready tofu, using either the optionally fried tofu or the drained salt-soaked tofu. Add salt to taste and stir-fry for 5 minutes.
Step 7: Turn off the stove and serve.
