Step 1: Put the 2.5 tbsp glutinous rice in a bowl and cover it with the separate soaking water. Refrigerate for at least 6 hours or overnight. Drain and discard the soaking water, then keep the drained rice ready for blending.
Step 2: In a dry shallow pan over low heat, lightly toast the ½ cup roasted black sesame seeds for about 3–4 minutes until fragrant. If using unroasted seeds instead, the author advises about twice this guide, roughly 6–8 minutes; judge by aroma and avoid burning.
Step 3: Put the drained soaked rice, toasted black sesame seeds and the separate 4 cups fresh soup water in a blender. Blend on high for about 2 minutes until smooth.
Step 4: Pour the smooth blended mixture into a pot. Cook gently over medium heat for about 10 minutes, stirring constantly as it thickens to prevent sticking. Keep the heat gentle rather than at a hard boil, and continue until the rice mixture is cooked and smooth.
Step 5: Turn the heat to low, stir in the 3 tbsp honey and gently cook for another 2–3 minutes while stirring.
Step 6: Pour the hot sweetened soup into serving bowls. Serve plain, or add a small sprinkle of white sesame seeds or a drizzle of well-shaken full-fat coconut milk if desired.
Step 7: Refrigerate any leftover soup promptly in a covered container and use within 2–3 days. Rewarm in a small saucepan over medium-low heat, stirring until thoroughly hot; the thick soup can splatter.
