Method3 steps

  1. Step 1: Wash the apple, cucumber, jicama (½) and chile. Core the apple, trim the cucumber and peel the jicama. Keep the apple peel on, then cut the apple, cucumber and jicama into thin matchsticks about 3 inches long. Sliver the red onion (⅓ cup) and measure ⅓ cup; trim and thinly slice the chile into rounds. Toss all these prepared ingredients together in a large bowl.

Uses 1 Granny Smith apple · ½ English cucumber · ½ small jicama · ⅓ cup slivered red onion · 1 serrano or jalapeño chile, thinly sliced into rounds · Water for washing the slaw produce

  2. Step 2: Wash and juice both limes. In a small bowl, whisk all the lime juice with the mayonnaise (¼ cup), Mexican crema (3 tbsp), vinegar, yellow mustard (1 tbsp), adobo sauce, celery seed (¼ tsp), salt (1 tsp) and black pepper (¼ tsp) until smooth.

Uses ¼ cup mayonnaise · 3 tbsp Mexican crema · 1 tbsp apple cider vinegar · 1 tbsp yellow mustard · Juice squeezed from both limes · 1 tbsp sauce from chipotles in adobo · ¼ tsp celery seed · 1 tsp kosher salt

  3. Step 3: Pour all the dressing over the prepared slaw and toss to coat. Divide into 5 side portions and serve promptly, ideally within 1 hour of preparing. Keep refrigerated until serving.

Uses All prepared matchsticks, red onion and chile · All whisked dressing
