Step 1: Melt all the butter (2 tablespoons) in a large skillet over medium-high heat. Add all the sliced chicken, minced garlic (2 teaspoons) and onion powder (1 1/2 teaspoons). Sauté for about 10–12 minutes until the chicken is fully cooked through. Stir in all 1/4 cup plus 2 tablespoons buffalo wing sauce, remove from the heat and transfer the sauced chicken to a heat-safe bowl.
Step 2: Heat the oven to 400°F / 200°C.
Step 3: While the oven heats, heat all the olive oil (1 tablespoon) in the same skillet over medium-high heat. Add the thinly sliced red and green bell peppers (1/2 large) and onion (1/2 large). Sauté for about 10 minutes until softened, then remove from the heat and set aside.
Step 4: Roll the full prepared dough ball into a large circle on parchment paper sized to your pizza pan. Place the parchment and dough on the pan. Make four short intersecting cuts across the centre, like two crossing X shapes, to form eight pointed flaps; leave the outer border uncut.
Step 5: Arrange all the cooked buffalo chicken and sautéed fajita vegetables in a ring between the centre cuts and the outer dough border. Top the filling with all the shredded mozzarella.
Step 6: Lift each central dough point over the filling towards the outer crust. Tuck and gently roll the meeting edges inward so they overlap and hold. Repeat around the dough to enclose the filling in a ring with an open centre.
Step 7: Brush the top of the assembled ring with the beaten egg, using enough to coat it. Bake on the pizza pan at 400°F / 200°C for about 20 minutes, until golden brown and the dough is baked through.
Step 8: Put the separately prepared ranch dressing in a small bowl in the open centre of the baked ring. Sprinkle with the chopped green onions, cut into 8 slices and serve with the dip.
