Method7 steps · about 25 min

  1. Step 1: Start with ready-cooked ham and ready-cooked Mojo pork; if using refrigerated leftovers, keep them cold until cooking. Heat a skillet over medium heat. Brown both sides of all the ham and pork slices, reheating thoroughly; leftover cooked pork should reach 74°C / 165°F. Transfer the heated slices to a plate.

Uses 2 thin slices ready-cooked baked leg ham · 4 large thin slices ready-cooked Mojo marinated pork

  2. Step 2: Split each 15 cm baguette piece lengthwise. Brush the cut sides with some melted butter, keeping butter for the exteriors. Place cut-side down in the skillet for about 2 minutes until lightly browned, then transfer to a work surface.

  3. Step 3: Divide the heated pork and ham between the bottom halves, then add one Swiss-cheese slice per sandwich and the sliced pickles. Fold or cut the filling to fit. Spread mustard on the cut sides of the top halves and close both sandwiches.

  4. Step 4: Brush both the top and bottom exteriors of each sandwich with the remaining brushing butter.

  5. Step 5: Heat the skillet over medium-high heat. Add both sandwiches, cover with baking paper and weigh them down with a heavy skillet or pot so they compress. Cook the first side for about 3 minutes until dark golden and crisp, watching the browning.
