  1. Step 1: Thinly slice the 450 g ready cooked char siu with a sharp knife. Keep it ready for the sandwich assembly; this recipe starts with cooked Chinese roast pork (450 g).

Uses 450 g ready cooked Chinese roast pork (char siu), thinly sliced

  2. Step 2: Mash or press the 3 garlic cloves, then mix with 1½ tbsp olive oil and ⅛ tsp salt. Adjust the seasoning to taste.

Uses 3 cloves garlic, mashed · 1½ tbsp olive oil · ⅛ tsp salt, or to taste

  3. Step 3: Split both bread rolls lengthwise. If they are very thick, scoop out a little soft bread to make room for the filling. Save any removed bread for another use.

Uses 2 Italian or submarine bread rolls

Split rolls with some soft bread removed
  4. Step 4: If using butter, divide all the garlic spread between one cut face of each roll, then spread 2 tsp softened butter on the opposite face of each roll, using 4 tsp in total. If omitting butter, divide the same garlic spread over all four cut faces instead. Lightly toast the prepared bread until the cut faces are golden and crisp, watching closely so the garlic does not burn.

Uses Split rolls; any removed soft bread is reserved for another use · Garlic and olive-oil spread · Optional butter: 2 tsp per roll, 4 tsp total; omit in the garlic-only route

Lightly toasted cut faces of the rolls
  5. Step 5: Divide the sliced char siu between the two toasted rolls and close them. Cut each sandwich diagonally into two portions to make four servings. Serve with the kosher dill pickle and set out the 2 tbsp Chinese hot mustard and 2 tbsp duck sauce alongside.
