Method7 steps

  1. Step 1: Use the selected ONE whole 4 lb chicken. Keep it refrigerated at 4°C or colder until preparation and handle it promptly on a clean surface. Keep raw-chicken handling separate from ready-to-eat foods.

Uses 1 whole 4 lb chicken

  2. Step 2: For roasting now, preheat the oven to 400°F. If choosing overnight refrigerated marinating in stage 5, preheat only when ready to roast the next day.

  3. Step 3: Line a baking sheet with foil and set a roasting rack on top, or use a v-rack. Prepare foil balls to stabilize the bird if needed.

  4. Step 4: On the SAME actual whole chicken from stage 1, gently loosen the skin from the breast and legs while keeping the bird intact. Rub ALL 1½ tablespoons butter over the meat under the skin, then coat with ALL 2 tablespoons olive oil.

Uses Complete actual selected whole raw chicken · 1.5 Tbsp butter · 2 Tbsp olive oil

  5. Step 5: Mix ALL the selected 2–3 tablespoons lemon juice, ALL 1 tablespoon za’atar, ALL 2 teaspoons Aleppo pepper, ALL 2 teaspoons cumin and salt and black pepper to taste. Spread this complete seasoning mixture inside and outside the skin of the SAME actual buttered/oiled chicken from stage 4. Roast promptly, OR cover and refrigerate the seasoned bird at 4°C or colder overnight. Choose one schedule; keep the overnight bird chilled until ready to roast.

Uses Complete actual raw whole chicken coated with butter and olive oil · 2-3 Tbsp lemon juice · 1 Tbsp za'atar · 2 tsp Aleppo pepper · 2 tsp cumin · Salt to taste for seasoning; amount unspecified · Black pepper to taste for seasoning; amount unspecified

  6. Step 6: Place the SAME actual seasoned chicken from stage 5 on its back on the prepared roasting rack, stabilizing with foil balls if needed. Roast in the 400°F oven, turning it onto its breast about halfway through the roast. Start checking at about 45 minutes and continue roasting until a thermometer reads at least 74°C (165°F) in the thickest breast AND innermost thigh and wing areas, avoiding bone. A chilled whole bird may take longer; use the actual temperature endpoint.
