Step 1: Heat the oven to 450°F / 230°C. Arrange all twelve ready-cooked falafel, thawed if needed, on a baking sheet. This heating stage uses prepared falafel ready for reheating.
Step 2: Bake the ready-cooked falafel for eight to ten minutes until hot throughout, reaching 74°C / 165°F when reheating chilled falafel. Continue heating if needed, following any longer package reheating requirement.
Step 3: While the falafel heat, peel and finely mince both garlic (2 cloves) cloves. Whisk all the tahini (1/4 cup), measured water (1/4 cup), lemon juice (2 tablespoons), minced garlic and paprika (1/4 tsp) together until the actual sauce is smooth and pourable.
Step 4: Wash and shred enough lettuce leaves for the six pockets, retaining any extra lettuce. Wash and slice the tomato (1) and half cucumber, slice the dill pickle (1) and peel and thinly slice the quarter red onion. Cut about one inch from the top of each of the six pita breads to open a pocket. Put two actual hot falafel in every pocket and share the prepared tomato, cucumber, pickle and red onion equally, adding the prepared lettuce as needed.
Step 5: Drizzle each actual filled pita with about one tablespoon of the prepared tahini sauce. Sprinkle some harissa seasoning into each as wanted, keeping any unused sauce and seasoning separately. Serve all six sandwiches promptly.
