Method10 steps
Step 1: Grease a slice tin (approx 27 x 17cm) and line with baking paper, leaving paper overhanging at sides to assist with removal of slice later.
Step 2: Line bottom of tray with milk coffee biscuits (12), cutting to fit if necessary.
Step 3: Add coconut, tin of condensed milk, halved glace cherries and 5-6 drops of red food colouring to a mixing bowl. Stir well to combine. Mixture should turn pink and hold together well.
Step 4: Layer mixture on top of biscuits in tray, spreading evenly and pressing down with fingers to create an even layer. Smooth this layer with the back of a spoon.
Step 5: Melt milk chocolate (240 grams) in a bowl using 20 second bursts in the microwave. Stir well between bursts.
Step 6: Pour melted chocolate over top of coconut mixture, using a spoon or tilting tray so the chocolate evenly coats the top of the slice.
Step 7: If adding the optional drizzle, melt the forty grams dark chocolate (40 g) in a microwave-safe bowl in twenty-second bursts, stirring between bursts until melted.
Step 8: If using the optional melted dark chocolate, drizzle it over the milk-chocolate layer.
Step 9: Place into fridge for at least 2 hours.
Step 10: Lift the chilled slice from the tin using the paper edges. Let it stand twenty minutes before cutting into squares with a sharp knife, to reduce chocolate cracking.
