Method5 steps · about 25 min
Step 1: Cut chicken thigh (1) into 1" pieces. Cut onion (1) finely.
Step 2: Melt butter (1 Tbsp) and add oil (1 tsp) in a frying pan at medium heat. Add chicken and cook for 1-2 minutes. Add onion and cook until onion becomes translucent.
Step 3: Add the cooked rice (2 cups) and stir-fry for 2 minutes. Season with the ¼ teaspoon salt and pepper. Clear a space in the pan, cook the ketchup (3 Tbsp) there for 30 seconds, then mix it into the rice and fry 1–2 minutes. Add the frozen peas and continue until hot, with the chicken cooked through to 165°F (74°C).
Step 4: Place half of the ketchup rice into a rice bowl or similar kind of bowl, pack lightly, and unmold on a plate. Make another one.
Step 5: Beat the 2 eggs with a pinch of salt. Heat a frying pan with ½ teaspoon of the omelet oil (1 tsp). Pour in half the egg mixture and cook a thin round sheet until set. Cover one moulded rice portion with it. Repeat with the remaining ½ teaspoon oil and egg mixture for the second serving.
