Step 2: Pan-fry the coated dory in cooking oil until crisp and cooked through, reaching 63°C (145°F) in the thickest part or opaque and flaking easily. Set aside.
Step 3: Blend the ginger (2 inches), onion, and garlic (3 cloves) into a fine paste.
Step 4: In a wok or frying pan, heat the 4 tbsp vegetable oil over medium heat.
Step 5: Add the blended paste and stir fry till fragrant, about 3 minutes.
Step 6: Add the green and red chillies (3). Stir fry till fragrant, about 2 minutes.
Step 7: Dilute the ½ tsp tamarind paste in the 100 ml water. Add it to the pan with the dark soy sauce (1 tbsp), rinsed and strained tauco (2 tbsp), and optional pinch of sugar. Mix well.
Step 8: Add the fried dory and mix well. Stir-fry for about 5 minutes until liquid evaporates and the fish is glazed. Taste and add optional salt only if needed after the rinsed tauco.
Step 9: Serve with steamed rice.
