Step 1: Put cleaned octopus (1 kg medium) in a pot with enough water to cover it, the three bay leaves and grape vinegar. Bring to a boil and cook about 30 minutes as the source guide, continuing until octopus is tender.
Step 2: Lift out cooked octopus, discarding boiling liquid and bay leaves. Rinse in clean water and drain. Put in a bowl, drizzle with part of the single 1/4 cup oil supply, add minced garlic and allow to cool/rest about 30 minutes before grilling. Reserve the rest of the oil for the final drizzle.
Step 3: Preheat a gas grill to medium-high.
Step 4: Cut apart the tentacles and grill 4–5 minutes per side until charred and hot.
Step 5: Put grilled octopus in a serving bowl. Drizzle with the remaining oil from the same 1/4 cup supply and the lemon juice. Season with listed dried oregano (1/2 tbsp), salt (1/2 teaspoon) and black pepper (1/2 teaspoon), and garnish with optional parsley. Serve.
