Step 1: Wash the broccoli (1 head) and cut its head into small florets. Heat all the vegetable oil (1 tbsp) in a non-stick wok, add all the broccoli florets and stir-fry over high heat for about five minutes until just tender. Add only a little of the separate water if the broccoli begins to catch.
Step 2: Peel and slice all four garlic cloves; wash, deseed and finely slice the red chilli (1). Wash, trim and slice the spring onions (1 bunch), and wash both pak choi (2) and quarter them. Have the shelled green soya beans (140 g) ready to heat; if their package requires cooking first, prepare the measured beans as directed before adding them. Add all the garlic and chilli to the broccoli wok and fry for one minute. Add all the prepared spring onions, soya beans, pak choi and purchased marinated tofu pieces (300 g), then stir-fry for another two to three minutes until the greens are tender and everything is thoroughly hot, following the tofu product heating directions.
Step 3: Stir all the measured hoisin sauce (1½ tbsp), reduced-salt soy sauce (1 tbsp) and roasted cashew nuts (25 g) through the cooked stir-fry and heat them through. Taste before adding any of the separate extra soy sauce. Divide the hot stir-fry into four portions and serve.
