Step 1: Pour the 1½ cups apple cider into a saucepan. Add the strips of rind from 1 lemon, 2 cinnamon sticks, 5 whole cloves and 1 star anise. Bring to a gentle simmer, then cover and simmer over low heat for 30 minutes to infuse the cider.
Step 2: While the cider simmers, thinly slice the green apple (1) and place a few slices in each of six glasses. Keep any unused slices aside.
Step 3: Remove the infused cider from the heat and let it cool until warm but no longer scalding. Stir in the ¼ cup honey and ¼ cup brandy until the honey dissolves. Strain the mixture into a jug, removing the whole spices and lemon rind.
Step 4: Fill each apple-lined glass about one-third full with the strained cider mixture, then top up with the light red wine. Stir gently. The drink should be warm rather than very hot; do not heat the assembled wine mixture. Keep any unused cider mixture or wine aside.
Step 5: Serve the six glasses immediately while comfortably warm. Add extra cinnamon sticks for decoration if desired, and leave the whole garnish uneaten.
