Step 1: Blend into a fine paste: shallots (4), garlic (3 cloves), turmeric (3 cm) and chillies.
Step 2: Heat the oil (3 tbsp) in a wok over medium flame, and saute the blended spices, cumin (0.25 tsp), cardamom (2) and cloves (2) for around 3 minutes until fragrant.
Step 3: Add white pepper powder (0.25 tsp) and salt (to taste).
Step 4: Add the lamb (250 g) cubes, stir until everything is well mixed.
Step 5: Pour the water (150 ml), stir and when it boils, lower the heat to medium and cook the meat until tender around 15-20 minutes.
Step 6: When the sauce thickens and most of the mixtures have evaporated, add the cooked rice (1).
Step 7: Fluff the rice, and then add the soy sauce.
Step 8: Mix everything together and cook until the liquid is absorbed, the grains separate and the rice is steaming hot throughout, around 10 minutes.
Step 9: Transfer the fried rice onto a serving plate and garnish with fried shallots and spring onions (1 stalk).
Step 10: Serve with kerupuk and acar.
