Step 1: Grind the shallots (100 gram), garlic (4 cloves), ginger (1-inch piece) and candlenuts (4) into a smooth paste. Heat the oil (2 tablespoon) in a wok over medium heat and sauté the paste with the Indonesian bay leaves (2), cinnamon, cloves (2), cumin (1/4 teaspoon), nutmeg (1/2 teaspoon) and ground pepper (1/2 teaspoon) until fragrant, about 5 minutes.
Step 2: Add chicken pieces and fry until no longer pink. Then, add tomatoes (1) and stir until they start to wilt.
Step 3: Stir in the water (1 cup), salt (1 1/2 teaspoon) and sweet soy sauce (4 tablespoon). Bring to a boil, then reduce to a simmer and cook until the chicken is tender and reaches 74°C/165°F in the thickest part away from bone, about 30 minutes.
Step 4: Line a broiler-safe baking sheet with aluminium foil. Remove the cooked chicken from the wok and arrange it on the sheet, leaving the sauce in the wok.
Step 6: Preheat the oven broiler.
Step 8: Serve: Serve the chicken immediately with steamed white rice and any remaining basting sauce.
