Step 1: Peel and finely dice the onion (1). In a bowl beat all three eggs, then mix in all the raw ground beef (¼ lb), finely diced onion, measured one tablespoon filling sambal, salt and black pepper to taste, and optional half teaspoon curry powder if wanted. Combine thoroughly, keeping the bread, frying oil and optional mayonnaise/extra topping sambal out of this raw egg-meat bowl. Do not taste it raw.
Step 2: Heat a large frying pan or griddle with a little vegetable oil, enough to lightly coat its cooking surface. Use a pan large enough for the split half baguette and a thin layer of its filling.
Step 3: Split the measured half baguette open lengthways to expose its cut faces. Pour all the egg-beef mixture onto the hot oiled surface, spreading it into a thin layer that fits those bread faces. Place the opened bread cut-side down onto the filling, working in portions if the pan requires it so all the filling and bread are cooked.
Step 4: Press the bread gently with a spatula and cook the filling side for about two minutes as a guide. Continue cooking as needed until the egg is fully set and the ground-beef filling reaches at least 71 °C /160 °F in its centre.
Step 5: Turn the filled bread carefully so its outer crust touches the pan. Cook briefly until that bread side is lightly crisp, keeping the already fully cooked egg-beef filling attached.
Step 6: Lift all the cooked filled bread onto a clean board. Keep it whole while adding any optional toppings in the next step, then cut it for serving.
Step 7: Add optional mayonnaise and/or the separate extra topping sambal to the cooked sandwich if desired. Then cut it into small portions and serve the complete half-baguette sandwich as one main serving.
